2 ripe bananas
¼ cup maple syrup
¼ cup coconut milk
1 tsp vanilla extract
2 tsp baking powder
1 cup almond meal
½ cup buckwheat four

Preheat oven to 350°F. In bowl, mash bananas with fork until creamy. Whisk eggs. Pour over bananas along with maple syrup, coconut milk, and vanilla extract, then stir. Blend dry ingredients and gradually add to wet. Stir gently until smooth. Do not overmix. Spoon into greased muffin tin. Bake 18-20 minutes. Remove from oven, let them cool—and enjoy!
